Easy sheep pan roasted potatoes
Cook time: 20 mins. Oven temp: 425 F
INGREDIENTS
2 Tblsp olive oil, avocado oil, or melted lard
2 lbs baby potatoes or fingerlings, or enough to fill a sheet pan, without crowding, when halved
1 tsp sea salt, or to taste
Pepper to taste
DIRECTIONS
Any type of potato can be cooked this way or a simple, delicious side to any meal! Simply cut larger potatoes into quarters or even smaller, into "French fry" size. Jazz up the seasoning by tossing the potatoes with 2 tsp crushed rosemary or 2-3 tsp healthy Ranch-style seasoning mix.
INGREDIENTS

DIRECTIONS
- Preheat oven to 425 F.
- Wash potatoes and cut them in half. We love this recipe for the Makah Ozette, and like to cut them in half lengthwise. It is delicious with the Cheshire's, too, and you can see their beautiful golden flesh when you cut them in half!
- Toss halved potatoes with oil, salt, and pepper. I do this with my hands or a spatula right on the tray.
- Bake at 425 F for 20 mins. or until potatoes are fork tender on the inside and crispy on the outside.
- Enjoy!

Creamy Goat Cheese Ranch Dip
Prep time: 5 minutes or less
INGREDIENTS
6 oz plain goat cheese
1 Tblsp Ranch-style seasoning mix
4 Tblsp milk, or enough to reach desired consistency
DIRECTIONS
Use this dip for a fresh veggie tray, in place of ketchup for French fries, or thin with a bit more milk and drizzle over a pan of roasted chicken and veggies for a delicious weeknight dinner. We love to dip the roasted Makah Ozette potatoes in this quick, creamy dip.
Mix it up with a honey goat cheese or herbed goat cheese. Use Italian-style seasoning for dipping breadsticks on pasta night.
INGREDIENTS
6 oz plain goat cheese
1 Tblsp Ranch-style seasoning mix
4 Tblsp milk, or enough to reach desired consistency
DIRECTIONS
- Put all ingredients in a food processor and process until combined and creamy.
- Add more milk as needed to thin to a dippable consistency.
- Enjoy!
